Caring for your bakes
Now that you have your lovely bakes, be sure you care for them properly to maintain freshness and flavor. Sundbakes cakes, cookies and macarons are made fresh without preservatives, so they are intended to be eaten within a day of when you pick them up.
Cakes
Transport your cake flat and secure on the floor of your car, never at a slant or on a seat. Keep your air conditioning on high and use a cooler to transport your cake long distances. Sundbakes cannot be held responsible for damages to the cake after pick up, so please drive carefully!
Store your cake in the refrigerator until your event. Allow your cake to come to room temperature for about 30 minutes before cutting and serving.
Never display your cake outdoors in warm weather, direct sunlight, or on an unstable surface. Cakes will melt (just like butter) in warm temperatures and direct sunlight.
When cutting a tiered cake, keep an eye out for the structural dowels and cake boards between the layers.
Cakes are intended to be eaten within one or two days of pick up. Leftovers can be frozen in slices wrapped in cling wrap.
Macarons and Macaron Cakes
Macarons should be stored in the refrigerator and are intended to be eaten within one to two days of pick up. Macarons with soft fillings will deteriorate more quickly than firmer fillings, so plan to eat soft filling macarons like lemon curd right away.
Allow the macarons you intend to eat to come to room temperature for about 30 minutes before enjoying.
Extra macarons can be frozen in an airtight container for several weeks.
Macaron cakes can be cut just like a regular cake. Store an leftover slices wrapped in cling wrap in the refrigerator.
Sugar Cookies
Sugar cookies should be stored at room temperature in an airtight container.
If you’d like to keep your cookies for longer, you can place the airtight container in the freezer, but avoid placing your cookies in the refrigerator.
Because cakes need to be refrigerated, cookie cake toppers will need to be refrigerated too prior to serving. If you don’t eat your cookie topper right away, it should be stored in an airtight container at room temperature after the cake is cut, rather than in the refrigerator with the cake. Cakes with cookie toppers should be served right away to keep the topper fresh.
